κ-Kasein-Corona (außen): Hydrophile, glykosylierte Haarlage verhindert Agglomeration. Bei pH 4,6 (Magensäure) verliert sie die Ladung → Mizellen aggregieren → Gel bildet sich → 5–7h langsame Verdauung.
Kasein-Submizellen (Mitte): αs1- und β-Kasein-Moleküle bilden amphipathische Submizellen (15–25 Moleküle). Hydrophober Kern, hydrophile Phosphoserin-Cluster nach außen.
Calciumphosphat-Nanocluster (Kern): Verbinden die Submizellen über Phosphoserin-Ca²⁺-Brücken. Grund für den hohen Calciumgehalt (~2.800mg/100g Protein) — und die hohe Calcium-Bioverfügbarkeit (Kaseinphosphopeptide).
Relativer Plasma-Leucin-Verlauf über 360 Minuten nach der Einnahme. Der entscheidende Unterschied für das Supplement-Branding.
Bei pH 1,5–2,5 (Magensäure) fällt der pH unter den isoelektrischen Punkt des Kaseins (pH 4,6). Die Ladung der κ-Kasein-Corona wird neutralisiert → Mizellen aggregieren → viskoelastisches Gel entsteht. Pepsin und Trypsin müssen das Gel langsam abbauen: Aminosäure-Freisetzung über 5–7 Stunden statt 60–90 Minuten bei Molkenprotein.
